Instructions
Preheat oven to 450°F. While preheating, split English muffins (with a fork!) and place on a parchment-lined baking sheet.
With a box grater, grate the mozzarella and set aside into a bowl.
Toast English muffins in the oven until lightly golden, about 5-7 minutes.
Remove muffins and top with a spoonful of tomato sauce, followed by a good amount of cheese and then a few pepperoni slices. Proportions here are up to you, but be careful, it's easy to accidentally put too much sauce and not enough cheese!
Place the mini pizzas back in the oven for an additional 3-5 minutes until the cheese has melted and started to brown. Optionally, you can finish them off quickly under a high broiler for about a minute. If you do this, watch them carefully because they'll burn quick!
Remove from the oven and allow to cool for a few minutes on a wire rack.
