Instructions
Preheat oven to 350°F. spread the peanuts out on a baking sheet in one layer (you will need multiple baking sheets). Roast the peanuts for 15-20 minutes, until golden brown and fragrant. This step helps the peanuts release their oils and adds a richer flavor, but if you prefer raw peanut butter skip the roasting, either way is fine!
Add the peanuts to the blender and pulse until they're ground up. If you want chunky peanut butter, save 1/2 cup of the chunks now to be added back later. Blend the rest on high until as smooth as desired. Pause every 30-45 seconds to scrape down the sides of the blender with a spatula as necessary. Once the desired consistency is reached, add the salt and other optional add-ins and blend for an additional minute. (If you want nothing but raw peanut butter, no salt is required).
