Add the milk, pumpkin, and sugar to a saucepan over medium heat. Heat up and stir until the sugar has dissolved and the milk is hot, but not boiling. Remove the pan from the heat and mix in the vanilla, 1/2 tsp pumpkin spice blend (see below), and the coffee.
Ladle the latte into two mugs, and optionally top with whipped cream and and extra pumpkin spice.

To Make Pumpkin Spice Blend
In a small bowl, combine the cinnamon, ginger, nutmeg, and cloves. Mix thoroughly with a whisk or fork until well combined. This makes more than you need for the recipe, and it's great to use for all kinds of things, like my pumpkin chocolate chip muffins!
