In a large skillet, brown your meat of choice, chopping it up with a spatula into small chunks. Once the meat is browned, drain the skillet if the meat has let off a lot of juices.
Add the minced garlic and sautée for ~30 seconds, stirring constantly. Add the veggie mix, soy sauce, and ginger and sautée until tender.
With a spatula, push the veggies into a ring in the skillet, forming a small well in the center of the pan. Reduce heat to low and add eggs (1-2 as desired) to the pan, and scramble them. Once the eggs are fully cooked, stir the entire skillet well until fully mixed.
Add the sriracha and stir to mix. Drizzle with sesame oil, and top with the green onion slices. Serve hot.
