If your bread isn't already stale, you can help the process along by putting the slices on a sheet pan and sticking them in a cold oven, then set the oven to 350°F. Check the slices often, but they should have dried out and become slightly firm like stale bread by the time the oven has come up to temperature. You can do this recipe without stale bread, but fresh bread has a tendency to not hold up as well to the custard.
