Preheat the oven to 400°F. Dice the bell pepper and zucchinis into bite sized pieces. Slice the sausage into 1/2-inch rounds. Add the bell pepper, zucchini, broccoli, sausage, and grape tomatoes to a large bowl and toss well with 2 tbsp of olive oil.
Line a baking sheet with tin foil, and evenly spread the mixed veggies and sausage on the sheet, making sure nothing is stacked on top of each-other. Drizzle the remaining 1 tbsp of olive oil over top, and then evenly coat the mix with all of the seasonings. Toss with tongs as necessary to evenly coat.
Bake for ~30-40 minutes, tossing halfway through. They're done when the veggies are soft, with a bit of browning.
