Rice Krispies Treats

Snap, crackle, pop! I loved rice krispies treats as a kid (I still do), and I’m really fortunate that they’re so easy to make at home. I definitely prefer homemade rice krispies treats, because you can incorporate flavors like brown butter and fresh marshmallow to add more depth to the dessert. These are perfect for a potluck or small gathering, and sure to be a hit with everyone!

Ingredients
  

  • 6 tbsp salted butter
  • 16 oz mini marshmallows
  • 1 tsp vanilla extract
  • 6 cups rice krispies (or fruity pebbles!)

Instructions
 

  • line a 9×9 baking dish with two pieces of parchment paper, perpendicular to each other and set aside.
  • In a large saucepan (I used my Dutch oven), melt the butter over medium heat. Once the butter has melted, add all but 1 cup of the marshmallows, then reduce the heat to low and stir constantly until the marshmallows are completely melted.
  • Remove the pan from the heat and add in the vanilla, stirring until fully mixed. Add the cereal and the last cup of marshmallows and mix until fully combined. Pour (or scoop) the mix into your prepared baking dish, doing your best to spread it around. Once it's all in the dish, take another sheet of parchment paper and place it on top of the rice krispies treats, this will stick a lot less and make the next step much easier. Gently press the rice krispies to the corners of the pans and flatten them out. Remove the top sheet of parchment paper and let the rice krispies set for at least one hour. Once set, cut into 4×4 pieces with a sharp knife.
