Shrimp Foil Packets

An at-home shrimp boil? Sign me up! I used to make this meal pretty regularly starting a few years ago, because it was incredibly delicious yet so simple to make. All you need are some fresh shrimp, andouille sausage, corn, potatoes, and seasonings wrapped in foil. You can stick it on the grill or cook in the oven and you’ll have a piping-hot, flavorful dish with all the flavors of a summer seafood boil!

Ingredients
  

  • 1.5 lbs peeled and deveined shrimp
  • 2 smoked andouille sausage links
  • 2 ears of corn
  • 1 lb red potatoes
  • 2 cloves of garlic, minced
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp freshly chopped Italian parsley
  • 1 tbsp Old Bay seasoning
  • 4 tbsp unsalted butter
  • kosher salt
  • freshly ground black pepper
  • 1 lemon, sliced into wedges

Instructions
 

  • Preheat your grill on high, or the oven at 425°F. Cut four 12"x12" (roughly) sheets of aluminum foil and set aside.
  • Slice the sausages into 1/2" thick pieces, and cut the ears of corn into 4 pieces each. Wash and dry the potatoes, and cut them into 1" cubes, leaving the skin on.
  • In a large bowl, combine the shrimp, sausage, potatoes and minced garlic. Drizzle the olive oil on and toss to evenly coat. Next add the Old Bay, salt, and pepper, and toss to coat.
  • Divide the mixture evenly across the four foil sheets. Top with a sprinkle of chopped parsley, 1 lemon wedge, and 1tbsp of butter. Fold the packets over the mixture and roll up the edges to completely seal the packet. Make sure they're sealed! Add some extra foil or repackage them in a new sheet if the first one wasn't large enough or it rips.
  • Place the foil packets on the grill or on a baking sheet and in the oven and cook for 25-30 minutes. If you pull them out and they're not cooked through, just reseal them and put them back in, and recheck after 5 minutes.
