Chocolate Chip Banana Bread

Chocolate Chip Banana Bread is one of the easiest recipes out there and one of my personal favorites! This bread works well as both a breakfast food and dessert, and consists of really simple, basic ingredients. I love whipping up a loaf when I have overripe bananas, which are really the key to a good banana bread. Pair with some coffee and fruit and you’ve got a breakfast of champions!

Ingredients
  

  • 1/2 cup unsalted butter, room temp (113g) + a little extra for greasing your pan
  • 2/3 cup granulated sugar (133g)
  • 3 very ripe bananas
  • 2 large eggs, room temp
  • 1 1/2 cups all-purpose flour (225g)
  • 1 cup semi-sweet chocolate chips
  • 1 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions
 

  • Preheat the oven to 350°F. Use some extra softened butter and a paper towel to liberally grease the entire inside of a 9×5 loaf pan. Dust with flour to coat, and then shake out any extra flour, and set the prepped loaf pan aside.
  • In the bowl of a stand mixer, add the sugar and butter and beat together on medium-high speed for a few minutes until creamy. Add the eggs, one at a time, until combined, scraping down the sides as necessary.
  • In a small bowl, add the bananas and using a fork, mash together until they're the consistency of thick applesauce, or runny oatmeal. Add the mashed bananas along with the vanilla to the stand mixer, and mix until fully incorporated.
  • In a separate bowl, add the flour, baking soda, and salt, and whisk together. With the mixer on low, slowly add the dry ingredients to the wet, and keep mixing until the batter is smooth, again pausing to scrape the sides as necessary.
  • Add 3/4 cup of the chocolate chips and fold in by hand until evenly mixed throughout the batter, and then pour into your prepared loaf pan. Sprinkle the remaining chocolate chips over top, and then bake for 55-65 minutes, or until a toothpick in the center comes out clean. I recommend checking it at 45-50 minutes, and while it likely won't be done yet, the top may be quite brown and you will want to cover with foil for the rest of the bake to prevent the top from burning.
  • Once done, remove from the oven and allow to cool for 10-15 minutes in the pan before turning out onto a wire rack to cool completely.
