I’ve seen this “Egg Roll in a Bowl” dish everywhere on social media, so I thought I’d give it a try! It’s essentially just combining all the ingredients (minus the wrapping) of an egg roll into one bowl so you get all of the flavors and less of the guilt. There’s also a ton of vegetables and protein in the dish, for you low-carb/high-protein eaters out there. A super easy dish to make for one day or as meal prep, and a really easy recipe that a whole family will definitely enjoy!
Egg Roll in a Bowl
Ingredients
- 1 lb ground pork, beef, or chicken
- 14 oz shredded cabbage or coleslaw veggie mix
- 1/4 cup soy sauce
- 1-2 large eggs
- 1 tbsp sesame oil
- 2 tbsp green onions, thinly sliced
- 1 tsp garlic, minced
- 1 tsp ground ginger
- 2 tsp sriracha
Instructions
- In a large skillet, brown your meat of choice, chopping it up with a spatula into small chunks. Once the meat is browned, drain the skillet if the meat has let off a lot of juices.
- Add the minced garlic and sautée for ~30 seconds, stirring constantly. Add the veggie mix, soy sauce, and ginger and sautée until tender.
- With a spatula, push the veggies into a ring in the skillet, forming a small well in the center of the pan. Reduce heat to low and add eggs (1-2 as desired) to the pan, and scramble them. Once the eggs are fully cooked, stir the entire skillet well until fully mixed.
- Add the sriracha and stir to mix. Drizzle with sesame oil, and top with the green onion slices. Serve hot.
