Fruit
Summer
My previous posts have argued that peaches are the best summer fruit, and grilled peaches are a large reason why! Grilling them over an open flame brings just the slightest smoky flavor to them and a perfect caramelization. Top with some homemade whipped cream, honey, cinnamon, and other fruit (I chose blueberries as a garnish, but feel free to use whatever you want, including mint!) and you’ve got a perfectly sweet, fairly healthy summer dessert.
Grilled Peaches with Whipped Cream
Equipment
- Grill
Ingredients
- 4 ripe yellow peaches
- 1/2 cup granulated sugar
- 1 tbsp cinnamon
- 2 tbsp honey
- 1/2 pint blueberries (or other fruit of choice)
- neutral oil to grease the grill
Whipped Cream
- 1 cup heavy whipping cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
Instructions
- Preheat the grill and allow to cool to medium/medium-low heat (this doesn't need to be precise, you just don't want to burn your peaches too fast!). Make sure you have a portion of the grill be direct heat, and a portion be indirect heat. Halve the peaches and remove the pits.
- In a small bowl, combine 1/2 cup granulated sugar and cinnamon and mix until combined. Generously sprinkle the cinnamon sugar onto the cut side of your peaches. Before putting the peaches on the grill, use a heat-safe grill brush to lightly grease the grill with oil. Place the peaches on the grill cut-side down over direct heat for about 5 minutes, until caramelized.
- Flip the peaches over and allow to cook an additional 5 minutes on the indirect heat portion of the grill. This will help cook them through a bit more and soften them up without burning them. Remove from the grill and allow to cool.
- Spoon whipped cream onto the peaches and dust with more of the cinnamon sugar mix. Garnish with blueberries and drizzle with honey.
- Enjoy!
Whipped Cream
- Place the bowl and whisk you are using (stand mixer or otherwise) into the freezer and chill for 10-15 minutes. This is very important for making a good whipped cream, do not skip this step!
- Once chilled, add the heavy whipping cream to the bowl and whisk on high until very soft peaks begin to form, 1-2 minutes. Slowly add 2 tbsp of sugar and the vanilla extract until the desired stiffness is achieved. Be careful, whipped cream can go from not quite done to over-whipped very fast, so watch it closely!
Notes
The sweetness of your whipped cream can easily be adjusted, the 2 tbsp of sugar used here is on the sweeter side, so if you prefer your whipped cream less sweet, try only 1 tbsp!
