Peach Salsa

I’m always looking for new recipes to incorporate my favorite fruit, and this peach salsa is the perfect find! The sweetness of the peaches are perfect in a summer salsa – trust me, you’ll find yourself eating the whole thing if you’re not too careful. These are perfect with tortilla chips, but would be a great addition to any salads, burritos, and tacos! What other peach recipes should I try?

Ingredients
  

  • 2 ripe peaches
  • 1/2 medium red onion
  • 1/2 jalapeño pepper
  • 1 lime
  • 1 bunch of fresh cilantro
  • kosher salt

Instructions
 

  • Peel and dice the peaches and add to a medium sized bowl. Very finely chop the red onion and add to the bowl with the peaches. Take the jalapeño and remove the stem, seeds, and ribs. Mince half of the pepper (or all of it, depending on how spicy you want it!) and add it to the bowl. Lastly, take a handful of cilantro and roughly chop it and add it to the bowl.
  • Using a spoon, mix all the salsa ingredients together until well combined. Add the juice of one lime (and the zest as well, for a stronger lime flavor) and a pinch or two of kosher salt, to taste. Serve immediately.
  • Enjoy!
