Sheet Pan Sausage and Veggies

Although I love posting new creations and recipes on here, let’s be honest – sometimes we just don’t have the time. Seriously, sometimes I look at other people’s feeds and think, how on earth do they have the time to make everything? I’m sure my feed can give off that vibe as well, so I’ll be honest – I LOVE an easy sheet pan meal, and it’s a go-to staple in my house. My favorite sheet-pan recipe (and one of the easiest) is sausage and veggies – just grab some kielbasa, andouille, or any other sausage of your liking, add some veggies, and place in the oven. It’s as simple as that! You can experiment with what kind of veggies you like (broccoli, sweet potato, bell peppers are all good choices) and add rice to make it a well-rounded meal. Ingredients
  

  • 12 oz precooked sausage, e.g. kielbasa or andouille
  • 2 medium/large zucchinis
  • 12 oz broccoli florets
  • 1 large yellow bell pepper
  • 1 cup grape tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp dried onion flakes
  • 1 tbsp dried parsley
  • 1 tbsp dried oregano
  • 1/2 tbsp red pepper flakes (adjust to taste)
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Instructions
 

  • Preheat the oven to 400°F. Dice the bell pepper and zucchinis into bite sized pieces. Slice the sausage into 1/2-inch rounds. Add the bell pepper, zucchini, broccoli, sausage, and grape tomatoes to a large bowl and toss well with 2 tbsp of olive oil.
  • Line a baking sheet with tin foil, and evenly spread the mixed veggies and sausage on the sheet, making sure nothing is stacked on top of each-other. Drizzle the remaining 1 tbsp of olive oil over top, and then evenly coat the mix with all of the seasonings. Toss with tongs as necessary to evenly coat.
  • Bake for ~30-40 minutes, tossing halfway through. They're done when the veggies are soft, with a bit of browning.
