Preheat the waffle iron. In a large bowl, beat the eggs with a hand beater or a whisk until fluffy and aerated. Beat in the flour, milk, oil, sugar, baking powder, salt, and vanilla, just until smooth. You don't want to over mix the batter or your waffles will come out too dense.
Once the iron has preheated, spray it down with non-stick cooking spray. Pour or ladle the mix onto the iron until covered (I usually cover most of it and then close the iron, it should spread to the edges). Cook until golden brown. Serve immediately with fresh fruit, whipped cream, and maple syrup.
