Waffles

As Leslie Knope said, “We need to remember what’s important in life: friends, waffles, work.” When I’m craving some classic breakfast food, waffles are my go-to! always so delicious, slightly crispy on the outside while soft and fluffy on the inside. I prefer my waffles smaller and thinner (think Waffle House style), but you can easily find waffle makers for those huge, fluffy Belgian style ones you find at hotels and restaurants. Top with some homemade whipped cream and fresh fruit and you’ve got the perfect breakfast (or dinner – who says you can’t eat breakfast food all the time?)

Ingredients
  

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups whole milk
  • 1/2 cup vegetable oil
  • 1 tbsp granulated sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • assorted fresh fruit (optional)

Instructions
 

  • Preheat the waffle iron. In a large bowl, beat the eggs with a hand beater or a whisk until fluffy and aerated. Beat in the flour, milk, oil, sugar, baking powder, salt, and vanilla, just until smooth. You don't want to over mix the batter or your waffles will come out too dense.
  • Once the iron has preheated, spray it down with non-stick cooking spray. Pour or ladle the mix onto the iron until covered (I usually cover most of it and then close the iron, it should spread to the edges). Cook until golden brown. Serve immediately with fresh fruit, whipped cream, and maple syrup.
