Chocolate Chip Cookie Cheesecake Bars

Chocolate Chip Cheesecake Bars are a classic, fool-proof recipe that anyone can make! These can be easily altered to any skill level – if you don’t want to make your own chocolate chip cookie dough, you can buy the prepackaged version at the grocery store (if you’re like me, you may want to purchase a little extra to consume at home by itself!). These are a huge hit at parties and so easy to make with very few steps and minimal ingredients. Next time, I might try experimenting with different cookie dough flavors to see what makes the best combo! Happy Friday!

Ingredients
  

  • 14 oz refrigerated chocolate chip cookie dough Use your favorite chocolate chip cookie dough, or even store bought is fine too!
  • 8 oz full fat cream cheese, softened
  • 1/2 cup granulated sugar (100g)
  • 1 large egg, room temp
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F. Line a 9×9 baking dish with parchment paper. Take roughly have of your chilled cookie dough (it doesn't need to be exact) and press it into the baking dish, creating an even bottom layer. Make sure it reaches all the way to the edges and corners! This may take a little finessing, depending on how firm your dough is, but that's ok, just keep going until it's a relatively even layer (these aren't works of art, they're just delicious!). Set aside when done.
  • In the bowl of a stand mixer, add the cream cheese and beat alone on high speed until light and fluffy. If your cream cheese isn't quite softened enough, this may take a bit of time, so stick with it, and scrape down the sides as necessary. Once nice and fluffy, add the sugar and beat in until well combined.
  • Add the egg and vanilla, and beat on medium-high speed until well combined, again scraping down the sides as necessary.
  • Pour the cream cheese mix over top of your cookie bottom layer. Take the remainder of the cookie dough and crumble it with your hands over top of the cream cheese filling. Be a bit gentle, you want the cookie crumble to sit on top of the cream cheese, not plop down heavily and sink into it. Once done, bake for 25-30 minutes, until the cookie parts are a nice golden brown.
  • Remove from the oven and allow to cool completely, and then remove from the pan and cut into bars with a sharp knife. Store extras in the fridge.
