Grinch Sugar Cookies

How cute are these Grinch cookies? I’ve been seeing these everywhere and they seemed really easy to whip up. Just use your favorite sugar cookie (or you can use my fave), add some green gel food coloring, and top with a red heart sprinkle. The sprinkles were the hardest part for me to find, but I was able to get ahold of some perfectly sized ones from Wilton Cakes. These are sure to be a hit at any holiday gathering, and if you’ve got young kids in your family, they’ll love being able to help decorate and make these with you. Such a festive holiday cookie to turn any ol’ Grinch around!

Ingredients
  

  • 2 3/4 cups all-purpose flour (360g)
  • 1 cup unsalted butter, room temp (226g)
  • 1 1/8 cups granulated sugar (235g)
  • 2 tbsp brown sugar (28g)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 2 tsp vanilla extract
  • green gel food coloring
  • Jumbo red heart sprinkles

Instructions
 

  • Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
  • Cream the butter and sugars together in the bowl of a stand mixer on medium speed until light and fluffy.
  • Combine the flour, baking soda, baking powder, and salt together in a separate medium bowl.
  • Add the egg to the butter and sugar mix and mix on medium speed until fully combined. Scrape down the sides with a rubber spatula as necessary. Add the vanilla extract and again mix until combined.
  • Slowly add the dry ingredients to the sugar mix and mix on low speed until everything is fully homogeneous. Be careful not to over mix! At this point, add the green food coloring and mix by hand with a spatula or carefully on low speed with the mixer. Start off with a little coloring at a time, and add more as necessary; you don't want to accidentally add too much!
  • roll the dough into ~1-1.5" balls and then roll the balls in a small bowl of granulated sugar to coat. Place them on the prepared baking sheets, with space for them to spread. Carefully place a red heart sprinkle on the ball, and gently press it in lightly.
  • Bake the cookies for 7-8 minutes. The centers will look soft, but don't worry they'll keep baking a bit more after you take them out of the oven. They will also fall as they are cooling. Let them sit on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.

    Great, simple, quick sugar cookie recipe! Perfectly soft in the middle with a little tiny bit of crunch around the edges. I also love that you don’t have to let the dough rest in the fridge before baking — it makes the whole process even faster. 10/10 will make again!
