Mini English Muffin Pizzas

Is there anything more nostalgic of childhood than coming home to pizza rolls or bagel bites as an after-school snack? Now you can make a more grown-up version, using homemade English muffins as the pizza base and putting whatever ingredients you’d like on top! I went for a classic pepperoni with mozzarella and tomato sauce, but you can mix and match toppings. Definitely great for an afternoon snack, lunch or dinner and super easy to whip up!

Ingredients
  

  • 4 English muffins
  • 15 oz can of tomato sauce (san marzano if possible)
  • 200 grams unshredded low-moisture mozzarella
  • pack of pre-cut pepperoni slices (make sure they're not too big!) °

Instructions
 

  • Preheat oven to 450°F. While preheating, split English muffins (with a fork!) and place on a parchment-lined baking sheet.
  • With a box grater, grate the mozzarella and set aside into a bowl.
  • Toast English muffins in the oven until lightly golden, about 5-7 minutes.
  • Remove muffins and top with a spoonful of tomato sauce, followed by a good amount of cheese and then a few pepperoni slices. Proportions here are up to you, but be careful, it's easy to accidentally put too much sauce and not enough cheese!
  • Place the mini pizzas back in the oven for an additional 3-5 minutes until the cheese has melted and started to brown. Optionally, you can finish them off quickly under a high broiler for about a minute. If you do this, watch them carefully because they'll burn quick!
  • Remove from the oven and allow to cool for a few minutes on a wire rack.
  • Enjoy!
