Is there anything more nostalgic of childhood than coming home to pizza rolls or bagel bites as an after-school snack? Now you can make a more grown-up version, using homemade English muffins as the pizza base and putting whatever ingredients you’d like on top! I went for a classic pepperoni with mozzarella and tomato sauce, but you can mix and match toppings. Definitely great for an afternoon snack, lunch or dinner and super easy to whip up!

Mini English Muffin Pizzas
Ingredients
- 4 English muffins
- 15 oz can of tomato sauce (san marzano if possible)
- 200 grams unshredded low-moisture mozzarella
- pack of pre-cut pepperoni slices (make sure they're not too big!) °
Instructions
- Preheat oven to 450°F. While preheating, split English muffins (with a fork!) and place on a parchment-lined baking sheet.
- With a box grater, grate the mozzarella and set aside into a bowl.
- Toast English muffins in the oven until lightly golden, about 5-7 minutes.
- Remove muffins and top with a spoonful of tomato sauce, followed by a good amount of cheese and then a few pepperoni slices. Proportions here are up to you, but be careful, it's easy to accidentally put too much sauce and not enough cheese!
- Place the mini pizzas back in the oven for an additional 3-5 minutes until the cheese has melted and started to brown. Optionally, you can finish them off quickly under a high broiler for about a minute. If you do this, watch them carefully because they'll burn quick!
- Remove from the oven and allow to cool for a few minutes on a wire rack.
- Enjoy!
