Sausage and Kale with Crispy Potatoes

This kale, sausage, and potato skillet meal is the PERFECT healthy meal prep recipe for the busy holiday season! I’m always looking for easy, healthy meals that I can eat for a quick lunch or dinner, and this recipe has all the starch, fiber, and protein you need. You only need one pan to cook it all in and minimal ingredients – some potatoes, kale (you can substitute spinach), and sausage of your choice. What’s your favorite meal prep recipe?

Ingredients
  

  • 6 medium chicken sausage links, sliced into 1" pieces
  • 1.5 lbs baby red potatoes, cut in half
  • 1 medium yellow onion, thinly sliced
  • 1 large bunch of curly kale, roughly chopped with ribs removed
  • 4 tbsp olive oil
  • 2 tbsp dried thyme
  • 1 tbsp garlic, minced
  • 1/2 lemon, juice
  • salt and pepper to taste

Instructions
 

  • Boil a few cups of well-salted water in a large pot. Add the halved potatoes and cook until easily pierced with a fork. Depending on the size, this should take 10-15 minutes. Once cooked, drain the potatoes and set aside.
  • In a large cast iron skillet, heat 2 tbsp of olive oil on medium-high heat until just begining to smoke. Add the potatoes cut side down, and let sit until they start to turn golden brown. Stir them together so the rest of the sides get crispy, in total this should take 5-7 minutes. NOTE: Unless your skillet is huge, this will likely need to be done in two batches. Once the potatoes are done, remove from the skillet and place into a medium bowl. Toss with thyme, salt, and pepper to coat.
  • Add another tbsp of olive oil and then add the sausage slices. Cook until the slices are crispy all around, ~5 minutes. Then add the sliced onion and cook for another 5 minutes, stirring frequently, just until the onions are beginning to brown and soften.
  • Reduce the heat to medium and add the minced garlic, and cook for 1 minute, stirring constantly as the garlic can burn quickly. Add the kale; this will likely need to be done a few handfuls at a time. As the kale wilts and cooks down, add more until all the kale has been added. Cook until all the kale has cooked down and wilted, about 3-4 minutes. Add back the potatoes and stir to combine, and then squeeze the juice of 1/2 lemon over top. Serve immediately.
