French Toast Sticks

I had some bread that had gone a bit stale, and you know what that means, French toast!! I decided to mix it up a bit and try out some French toast sticks, something I haven’t had since I was a kid, and let me tell you, they’re even better than I remember! Super easy to make with minimal ingredients, they’re a great way to use bread that you would have otherwise tossed, not to mention a crowd pleaser. I stuck with the classic maple syrup, but they’re perfect for other dipping sauces like chocolate or honey butter too!

Ingredients
  

  • 8 slices stale thick-cut bread of your choice See Notes
  • 4 large eggs
  • 1 cup whole milk or heavy cream
  • 2 1/2 tsp cinnamon
  • 5/8 tsp nutmeg
  • 1 tbsp granulated sugar
  • 1 tbsp vanilla extract
  • 6 tbsp unsalted butter
  • maple syrup

Instructions
 

  • Cut the slices of bread into 4 equal sticks.
  • In a medium bowl, add the eggs, cream or milk, cinnamon, nutmeg, sugar, and vanilla. Whisk until they're fully combined, then pour the mix into a shallow dish (I use a pie dish). The shallow dish makes dipping the sticks easier.
  • In a large skillet, heat 2 tbsp of butter over medium heat. Once the butter has melted, place 5-6 sticks in the custard mix, rolling them over to make sure they're evenly coated, but don't let them sit in the custard too long, or else they'll get soggy. Remove the sticks, and let any extra custard drip off for a moment or two, then place them in the pan. Let them cook for a few minutes, or unitl the bottoms have browned and turned a bit crispy, then flip them over and cook on the other side until done. Rebutter the pan between batches, and repeat for the rest of the sticks.
  • Serve immediately with maple syrup and fresh fruit.
  • Enjoy!

Notes

If your bread isn’t already stale, you can help the process along by putting the slices on a sheet pan and sticking them in a cold oven, then set the oven to 350°F. Check the slices often, but they should have dried out and become slightly firm like stale bread by the time the oven has come up to temperature. You can do this recipe without stale bread, but fresh bread has a tendency to not hold up as well to the custard.
